Roasted Cinnamon and Vanilla Cashews

Enjoy this snack, which is gluten-free, vegan and paleo-friendly. Serves 4.

Ingredients:

1 cup raw cashews (or almonds) ½ cup pure vanilla extract ½ cup water 2 Tablespoons cinnamon (or more if you desire for added flavor)

Instructions:

  • Place cashews in a bowl to soak overnight in 1/2 cup vanilla and ½ cup of water (if you opted for extra cinnamon—add the “extra” portion now)
  • In the morning, spread the nuts out on a paper towel to thoroughly dry. This takes a few hours
  • Preheat the oven to 200 Degrees
  • Place nuts on a parchment- or silpat-lined baking sheet and spread out evenly
  • Sprinkle with the 2 Tablespoons (or more!) of cinnamon
  • Roast in the oven for 3 hours
  • Allow to cool before serving
