Yummy Roasted Pumpkin Seeds

Fall is here and we know that the candy corn/peanut mix is a popular snack sitting in candy bowls across America, but we've got a healthier option for you to try: Roasted Pumpkin Seeds. If you enjoy a salty, crunchy snack at any given time, then you're going to love these! Not only are they yummy, but the health benefits are amazing! Did you know that pumpkin seeds are heart healthy? We'll snack to that! Pumpkin actually has a lot of other health benefits too, so be sure to stock up for Thanksgiving!  

Roasted Pumpkin Seeds Recipe

Ingredients: 2 cups of pumpkin seeds (raw from your carved pumpkin), 1 Tbsp of ghee, 2 tsp of sea salt   Directions:
  1. Boil pumpkin sees in water for 10 minutes while preheating oven to 350 degrees Fahrenheit.
  2. Strain pumpkin seeds and dry with kitchen towel.
  3. Melt ghee and combine with sea salt. Pour over dried pumpkin seeds and mix thoroughly.
  4. Cover baking sheet or casserole dish with parchment paper and spread seeds over the surface.
  5. Bake for 60 minutes or until seeds are thoroughly roasted, golden, crispy and crunchy!
Tip from Victoria: Of COURSE I had to try this before passing on, you can add any other organic seasoning you like. For a little spice, my family requested a little cayenne added with the sea salt and they loved it! Recipe Courtesy of ketogasm.com
